I’ve resolved to keep a bag of the mixed stir fry veggies around. They are frozen but that’s pretty close to fresh. No waste, always there, quick, no excuses! I also picked up some vegetarian meat substitutes to add to it. The mix has snow peas, chestnuts, mushrooms, squash, baby corn, peppers, and more.
Stir fry is like soup: you pretty much can’t mess it up. It’s a lot of healthy stuff you can shove in your face with a spoon. It’s quicker than soup though, and you get some differentiation in flavors and textures.
Today I think I’ll add some crawfish to it from last night’s leftovers. 🙂
