I  made this from a recipe from the good folks who make one of my favorites: PB2.

Here ’tis:

1 cup PB2 with appropriate water
1/2 cup honey
1 egg
1 tsp baking soda
1 tsp vanilla extract
1/2 ripe banana
1/2 cup rolled oats
1/4 cup coconut flour
1/4 cup dried cranberries
1/4 cup chocolate chips
1 tbsp ground flax seed
Preheat over to 350′. Use parchment paper to line cookie sheet. Combine all ingredients but dried cranberries and chocolate chips in a mixer and mix for a few minutes until blended well. Once blended combine cranberries and chocolate chips and mix until evenly dispersed in dough. Using two spoons, scoop the dough with one spoon and remove the dough with the other spoon. Press the spoon flat on top of the cookie to shape. The dough is sticky.
Bake for 14 minutes, or until cookies brown on top. Let cool for 10 minutes and enjoy! After cookies have cooled store cookies that won’t be eaten within 48 hours in an airtight container in the fridge.

Cookies should last in the fridge for up to a week.

Rob’s Tweaks

  • I used less honey and added some Truvia.
  • I used a pasteurized egg mainly because we were out of regular eggs, plus then you can safely eat the batter.
  • I had no cranberries. Small loss.
  • I threw in some carob powder. Gave it sort of a molasses flavor.
  • I put a little granulated truvia on top of a few of them kind of like sugar cookies.
  • I didn’t put in chocolate chips, but the carob takes the place of that mostly
  • Plans: don’t use the banana. I expect it to remind me a little of a molasses oatmeal cookie then, like the kind you find in that certain other junk food product that is crack/creme filled. I’m not going to even say the name.
  • Spray your spoon with some cooking spray to keep it from sticking to the cookie as much.
  • This could be gluten free if you skip the oats.
  • I’ll use more baking soda & more water next time to get a crispier fluffier cookie.
