Shaun T Cookies: the Recipe, even healthier. But they’ll taste the same.

I’ve made the Shaun T Cookies several times. It ain’t Thin Mints but it won’t hit your waistline like them either.
Ingredients
- 1 tbsp natural peanut butter (option: substitute PB2. You can use a ton of PB2 for the same calories as peanut butter) If you use PB2 add some water because it has no water or fat like peanut butter
- 1/4 cup old-fashioned oats
- 1/4 cup reduced-fat ricotta cheese (fat free is ok too)
- Stevia to Taste (I use Truvia because it’s less bitter)
- Option: Some local raw honey perhaps to taste
- 1/4 tsp baking powder (double for lighter cookies)
- 1/2 tsp flaxseed
- 1 egg white (use a pasteurized if you like to eat the batter. Whole egg is an option too)
- cinnamon
- Dash of salt
- 1/2 tsp. vanilla extract
- Add water for thinner lighter cookies
Directions
Preheat oven to 350°F degrees. Line pan with parchment paper. Mix everything together with a fork, pressing to mash ricotta cheese. Spoon 5 cookies onto pan. Bake for 10-12 minutes or until tops of cookies start to brown.
Option: line a pan with foil and use cooking spray instead of parchment paper.
Options: put a little Truvia on top like a sugar cookie. Add some Carob powder.
Option/Example: Last night I left out the peanut butter, and used a single packet of the Maple/Brown sugar Quaker Oats flavor. I left out the flax and used a whole egg. I made just a single big cookie and broke pieces off because I’m lazy. 🙂 I used cooking spray on an old pie plate I keep washing. Call it a cake if you like.
