Remember this guy?

Here ’tis:

1 can Tuna in Water

1 egg or around 2 egg whites

1 TBSP Parmesan or Pecorino Romano

1 TBSP Capers or finely diced pickle. Sweet or dill, your choice.

1 Piece Toasted Bread: Toast and Blend it into crumbs. I used whole wheat. Great use for stale bread.

1 Tbsp Curry or Curry powder like the ones show below (I own both.)

Dill Weed seasoning: As desired. I didn’t use it but it occurred to me it’s a good idea for this since it’s fish. 🙂

Crack the egg into a bowl and stir it all up. Add some more egg white or bread crumbs to make it stick together. Mash the capers a bit if you like a little more pickle flavor.

Hand form patties and sautee in curry or regular oil or cooking spray. Medium heat. Wait til it cooks and binds together to flip it the first time.

Voila. Sandwich, wrap, or by itself are all good options. they probably freeze well if you want to double the recipe.

Note on seasoning: don’t like Curry? The Tony Chachere’s in the widget is great on everything. The Bisto Curry from Heinz is a great sauce maker and would be awesome on some baked sweet potato fries.
